Steak Locker Club
Idea: Use the Steak Locker to age and experiment with (our) meat. If we ever get bored of that, we can do charcuterie. There are six guys in this group: Jason, Tony, Corey, Brian, Sergio and Noel. Considering that most of our wives (Sergio’s not included) would kill us if they were not invited to participate in the consumption, I think this is the best number.
Execution: Whatever the fuck we want. The first round will be from Alpine Butcher and will be USDA Prime standing rib roasts. The fridge should fit (4x) 5-6 bone-in roasts. Below is a form where you can leave your input and suggestions on how we should go about the first round. My personal goal for this is to get a few 240 day aged steaks. We should expect 40-50% loss of mass for a 240 day age. I had one in Dallas once and it was one of the best steaks I’ve ever had.
My initial thought is to start the 240 day age roast right away. 60 days into the aging, I’ll add another roast for 180 days. 150 days into the aging, I’ll add another roast for 90 days. 180 days into the aging, I’ll add another roast for 60 days. We can then have an amazing dinner at the 240 mark with the 4 different steaks. That gives us the first 60 days with 3 empty spaces…
What to do with the 3 spaces? I am open to any and all ideas, but mine is: three aged roasts for 45 or 60 days (vote below). First roast no flavor added. Second roast wrapped in whiskey soaked cheese cloth. Third roast wrapped in tequila soaked cheese cloth. What do we think? I also would be curious to do a pork standing roast for 30 days. Brad does one in the video below and it blows the guy’s minds.
